Mamebu-jiru
Yamagata-cho, Kuji, Iwate Prefecture
Walnut-filled dumplings floating in a savory soup that refuses to choose one mood.
Mamebu-jiru is a Kuji-area soup from Iwate containing small flour dumplings wrapped around walnuts, sometimes with brown sugar. They simmer with vegetables, tofu and a soy-seasoned fish-and-kelp broth. Sweet inside and savory outside is not confusion here. It is the point.

What It Is
An Iwate soup of walnut-filled flour dumplings, vegetables and tofu in a soy-seasoned dried-fish and kelp broth.[1]
Why It Matters
The surprise is structural: a walnut and sometimes brown-sugar center gives way to soy broth, root vegetables and tofu. The bowl holds celebration, mourning and ordinary cold-weather comfort without flattening them into one recipe.[1]
Origin Story
Mamebu-jiru is closely associated with Yamagata-cho in Kuji. MAFF records an Edo-period scarcity account and several explanations for the name, but presents each as something said locally rather than a proved documentary origin.[1]
- One local account says wheat-and-walnut dumplings served as a substitute for noodles during repeated poor harvests in the Edo period.[1]
- Explanations for the name include the dumplings' pea-like size and resemblance to mari-fu; the source does not choose a proven etymology.[1]
- The soup appears in weddings, funerals, New Year meals and winter home cooking, with dumpling size carrying local ceremonial distinctions.[1]
Recipe Outline
Wrap walnut pieces, with optional brown sugar, in small flour-dough balls and simmer them in a soy-seasoned niboshi-kombu broth with root vegetables, dried gourd and grilled tofu.[1]
Ingredients
- wheat flour
- walnuts
- optional brown sugar
- carrot
- burdock
- dried gourd
- grilled tofu
- niboshi
- kombu
- soy sauce
Steps
- Prepare a broth with dried sardines and kelp.
- Simmer the vegetables, dried gourd and grilled tofu until nearly tender.
- Make a firm flour dough and wrap small portions around walnut, adding brown sugar if desired.
- Add the dumplings to the soup and simmer until cooked through.
- Season with soy sauce and serve hot.
Replace niboshi with a kombu and dried-mushroom broth; the walnut dumplings themselves need no meat.
